eggnogRawRaw Food Eggnog …Hmmm.  Well we are underway on Week 1 of the 30 Day Raw Food Challenge.  What makes this time unique from the first one we did last September is this… This time we are going through the Holidays.

Now that wasn’t MY idea, I am not a glutton for punishment!  My next coaching series was not scheduled to begin until January.  A pleading email during November got me to call an emergency “Monday after Thanksgiving Master Cleanse” and then straight into the 30 Day Raw Food Challenge.

So as the Holidays rapidly approach, I do not want my committed crew to feel too deprived.  After all, they only get Christmas off and then right back on the plan.  I wanted them to enjoy the flavors of the season and my mind went straight to Eggnog!

Since I have been doing the Master Cleanse three times per year, I noticed I continue to enjoy fatty foods, less and less.  This past Thanksgiving I bought my usual portion of eggnog, but it sat in the fridge this year, because I did not enjoy the heavy, dairy flavor as in years past.

So my personal project and challenge became to create a raw food version of the beloved Holiday favorite, thus my Raw Food Eggnog.  So how did it turn out?  Creamy? Check!  Rich?  Check!  Yummy?  Check!  So what went wrong?  The COLOR!!!!!  I want my Raw Food Eggnog to be yellow, just like the supermarket makes it!!!  (grin)

My Raw Food Eggnog came out beige.  Beige is not a color I want to serve during my upcoming Christmas dinner!  So I must admit, I am not there yet!  In retrospect, it could have been I went overboard on the spices.  I used nutmeg, cinnamon, cloves and allspice!!!  That is probably enough to turn anything beige!!  I did use turmeric also for color, but I guess with all the brown spice turmeric could only do so much!  Also it might have been the dates, I could always substitute honey or agave nectar.

So I am going to share the recipe with you and the version I give you will have less spice.

Raw Food Eggnog

  • 1 thai young coconut
  • 1 cup water
  • 3/4 cup cashews (soaked and drained)
  • 1 teaspoon vanilla
  • 5 dates, pitted
  • 1 frozen banana
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • dash of ground cloves

Open the young coconut, reserve 1 cup of coconut water.  I drink the rest in a martini glass!  Scrape out the young coconut meat.  Put all ingredients into a high speed blender and blend until smooth and creamy.  Refrigerate until cold and serve.

Honestly I did not refrigerate the batch I made.  I took a picture of it, and as I write this article, I have had about five martini glasses of it!

I will be working on other raw food dishes for my upcoming Christmas dinner, however I am quite pleased with my Raw Food Eggnog!  Enjoy!

    Hi There! This looks amazing! I will definitely try it…I have everything except the dates. I’m wondering how many servings would this recipe make? Also, could I sub out the dates for Stevia?

      Hey there Donna! It made a nice size batch, but I drink my eggnog in a martini glass! It makes about 2 cups I think, maybe three! Yes you can use Stevia, but will Stevia get it sweet enough is the question?
