Raw Dessert Chocolate Cherry Parfait

One of my favorite aspects of raw food is Raw Dessert!  Maybe because I was told by a Holistic Doctor to go on raw food for 9 months, so my body could heal itself of a bleeding fibroid tumor.  I did, but back then Raw Food to me was simply salad, salad and more salad.  Raw Dessert was not something I even knew existed.  So I spent a grueling nine months tolerating salad, totally missing out on what is now the joy of eating raw.

I am currently coaching a small, intimate group on Raw Food, yes we are going through December, but I am allowing them Christmas day off. A raw dessert such as this, planted on the Holiday buffet table, would blend in rather inconspicuously and no one has to know it’s healthy!

It is three days before Christmas and I wanted to play around with a raw, sweet potato pie.  How I got side tracked to a raw Chocolate, Cherry Parfait, I have no idea!  I soaked my cashews and my dates and got started.  As I sit here scraping the last remnant of my raw dessert into my mouth, I still can’t believe how quick it was to put this together.  Avocado made it totally creamy without butter, cream or eggs, and the cherries were the perfect fruit to buffer how rich the raw chocolate mousse was.  Let me share.

Raw Dessert – Chocolate Cherry Parfait

Chocolate Mousse (a raw dessert in itself!)

  • 1/4 cup pitted dates, soaked in water for 10 minutes and drained
  • 1/4 cup maple syrup or agave nectar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup mashed avocados (1-1/2 avocados)
  • 6 tablespoons unsweetened cocao powder
  • 1/4 cup water

Put the dates, maple syrup and vanilla in a blender, blend until smooth.  Add avocados and cocao powder and blend until creamy.  Add the water and process briefly.  Chill while you make the vanilla cream.

Vanilla cream sauce

  • 1/2 cup soaked cashews
  • 3 tablespoons water
  • 1 tablespoon maple syrup or agave nectar
  • 1/2 teaspoon vanilla extract

Put ingredients in a blender and process on high speed until smooth. Chill for at least 30 minutes.

Note: I prefer my raw dessert to have a coconut vanilla cream, but for time sake I went with a cashew cream.

Assemble your raw dessert by spooning in a layer of the chocolate mousse, a handful of chopped almonds and ten cherries that have been pitted and split in half and finally the vanilla cream.  Finish with another layer of the chocolate mousse, vanilla cream, and chopped almonds. Your raw dessert is complete with a cherry on top!

I took the picture of my raw dessert but I am not a pro so the lighting is off and it does not look as yummy as it was, and it was absolutely delicious.  My son and I devoured it together.  But I did a little research and found my favorite raw dessert website had plenty of parfaits and photos so do take a peek!

If you are a beginner in the quest to eat healthy take baby steps if you need to.  Warning, if you are on a weight loss journey, dessert should not be the norm for you. However it is Christmas, Indulge this ONE day, with a decadent
