Eat the Rainbow Black Bean Mushroom Burgers

I am super excited!  I have been looking for a really good Black Bean Burger recipe – Why?  In Eat the Rainbow, 1/2 cup of beans per day is a staple.  I am not a big fan of beans, I only like them in the Bean Pies from Los Angeles, that men stand on the corner and sell in pink boxes!  Don’t laugh, bean pies are delicious, but they are full of white sugar, fat and white flour!  All the stuff we as Americans love to bake with, but is not good for us!

What I have noticed is beans are a wonderful filler in salads and keep you full longer.  Beans are high in nutrition and low in calories.  They are also a low glycemic food, so they do not raise your blood sugar level and they digest slowly.  Beans reduce hunger and help curb food cravings.  They are superior to whole grains nutritionally.

The other reason is, I was missing burgers recently but it is so hard to find a really good veggie burger.  I found a great one in Utah, but I live in Orlando so… my search continued.  I was thinking if I could find a black bean burger, maybe one with mushrooms, I could enjoy a bit of a hearty flavor, so still the search continued.

My first try at it was awful!  It was so bad it was laughable.  The burgers were so bad I posted them on Facebook (Dec 17, 2015) so my friends could have a good laugh, and the round of jokes began!  There was nothing about this meal that tasted even remotely like a burger. The best part was the homemade balsamic vinaigrette that I made, the avocado mayo was excellent, the tomatoes and romaine lettuce got me through the meal , but that black bean burger OMG , it was awful. Back to the drawing board!  Since I do not mind being transparent, I took it on the chin and kept searching!  I had not begun my Eat the Rainbow series at that point so I had time.

The answer came when my daughter sent me a recipe of a black bean burger that she really enjoyed.  I took that recipe, added sautéed mushrooms and onions (another staple on Eat the Rainbow that I thoroughly enjoy) and what I ended up with was a wonderful Black Bean Mushroom burger.  Now when I shot the video I did not know they were wonderful, in fact I shot the video and had never tried them.  I was so scared to try them that you can probably see it in my face, but they turned out so excellent, I was ecstatic!

Eat the Rainbow Black Bean Mushroom Burgers

  • 1 can black beans or 2 cups cooked black beans
  • 1 egg white ( or you can use 1 tablespoon ground flax seeds soaked in 3 tablespoons of water)
  • 1/2 cup multigrain bread crumbs
  • chopped onion
  • Sliced mushrooms
  • salt/pepper/chili powder/cumin/garlic powder

Directions

  1. Sauté onion and mushrooms in 1 tablespoon olive oil
  2. Drain and rinse black beans and put into food processor
  3. Add the mushrooms, onions, bread crumbs, egg or egg substitute and spices
  4. Pulse mixture until it is textured but not mushy
  5. Form into four patties
  6. Cook in skillet until brown, turn and cook on other side

I used an organic Worchestershire sauce and Dijon mustard as condiments and they were delicious. I do not eat a bun but the burger was so full of flavor and so delicious I did not miss it.

Beans are rich in fiber and minerals.  They are an excellent weight loss food, which is why I have included them in Eat the Rainbow.  I have come across some pretty interesting ways to include beans in your meals that I will share with you as I try them out!
