Homemade Balsamic Dressing for Eat the Rainbow

So you signed up for Eat the Rainbow, you’re excited, full of zeal.  “This time I am going to win, I am going to get to my goal,” you tell yourself.  You register, get your shopping list and you run out to buy the ingredients.

And then it hits you.  I am in Eat the Rainbow, I am going to be in my kitchen preparing meals?  Really?

No quick trips to my favorite fast food place?  Nope!

I have to rediscover my kitchen?  Yes!

Pick up a pot?  Yes ma’am!

But it is not that bad!  I have a client that lost 4 inches off her waist in one month with Eat the Rainbow.  So, if reacquainting yourself with your kitchen will get you out of those size 12’s you hate, and back into your spare closet where you keep all those size 6 clothes you can’t bare to part with, is it worth it?

Ok, now that I have your attention again, let’s talk about some things.  Eat the Rainbow – Transform in 30 uses the Power of Food.  Over the next few weeks we will explore that power to help you get reacquainted with pots, pans, kitchen gadgets and those designer knives you never use!

The refrigerator will be used for items other than left overs from your favorite restaurants!

So let’s start easy with a simple Balsamic salad dressing.

I am going to review a recipe for a Balsamic Dressing that I found on-line.  It came from a website called Detoxinista.com  The Balsamic dressing turned out fabulous although I tweaked it for Eat the Rainbow.

Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 1 shallot
  • 2 small garlic cloves
  • 1/8 teaspoon sea salt
  • 1 tablespoon raw honey
  • 1/4 cup + 2 tablespoons olive oil
  • 1/4 cup + 2 tablespoons water

Directions

Combine all ingredients in a high speed blender and blend until completely liquified.  Pour into a jar and refrigerate.  Dressing will separate so shake before using.

 

Balsamic Dressing can be used not only on your salad but you can pour it over steamed or roasted vegetables to spice up the flavor.

As we continue to Eat the Rainbow we will learn ways to turn up everyday veggies with Pizzaz!  Having a variety of salad dressings on hand is a great way to do it.
